3 Simple Ways to Keep Your Credit in Check

Nate is back!!! I missed him so much, and so did Binky. SO nice not being alone in the apartment. I tend to freak myself out sometimes when I'm alone.

Another week where I have nothing to say :( I hate that I'm not blogging, I really do.

But, my computer is SHOT right now. I'm actually blogging from Nate's computer right now. I need a new one so badly, especially since one of my classes starts in 2 weeks. And it's solely online. :-/

We are doing some new system implementation at work this week, and because of all the chaos it's made my days FLY by. Is it seriously already Friday?? so awesome.

I have finally finalized plans for my BFF's bachelorette party. I'd tell you guys, but she doesn't know what we're up to, so it'll have to wait to be blogged about after the party. :)



I have absolutely no plans this weekend, and I can't wait to utilize that extra time for sleeping in! It's much needed.

CRAPPIES

If you follow me on Instagram, then you already know that Nate's grandpa passed away earlier this week. It's been really tough for the whole family. He has such a small family, so they are all so very close and tight-knit. It's very hard seeing the man you love in so much pain. Please continue to pray for him and his family. His grandpa was such an incredible man, and I'm beyond blessed that I got to know him for the time Nate and I have been together.



I mentioned above that we're merging and implementing new systems at work. This has been HECTIC. The whole day is full of meetings, trainings and learning all while see patients like I normally do. It's a bit stressful, and I've been SO exhausted all week long. Definitely welcoming the weekend with open arms!

HAPPIES

I ran a bunch of errands yesterday. I had to buy some gifts for a few showers coming up, pick up my contacts, take some clothes to Plato's Closet, etc. I always feel so accomplished on days like those.

My BFF, Jillian, is having her baby shower this weekend. I can't wait to celebrate her baby boy! I got her some pretty awesome gifts, if I do say so myself. ;)

Grey's Anatomy is BACK!!! To say I'm excited is an understatement. It's just in time because in a few weeks PLL will be gone, which is NOT a happy :(


We had chicken fried rice for dinner last night. My fave dinners are the quick, easy and delicious ones. It only took me like 15 min to make and the clean up was even better, ya know - because Nate does it. ;)

CRAPPIES

I am dealing with my kidney stones again. I was having a pretty good run with not being too bothered by them lately. But they attacked me this week. NOT good. I was in tears, not only from pain but of frustration over these stupid things.

I'm in the process of planning my BFF Stephanie's bachelorette party, and while that is a HAPPY, it's a crappy on how hard it is to plan. Trying to make sure everyone can do it at the same time, getting a hotel booked, plans squared away and all while keeping this a surprise isn't an easy feat.

Annnd, as I was finishing up this post, my computer just shut down all on it's own. GAH. I need a new computer so badly!

2014 To-Read Book List

My to-read list is ever growing. I'm constantly adding to it as I find new books. While there's never an end in sight, it's still exciting to see that list grow as I receive recommendations from friends and family.

I previously mentioned that I had set a goal for myself to read 40 books in 2014. I have way more than 40 that I have yet to read that I already own. So, I've told myself that I can't buy anymore books until I finish the ones I already own. If they're gifted to me - well, now that's another story. ;)

HAPPIES

This week has absolutely flown by!!! I can't believe it's already Friday. What a whirlwind. I always like when the weekend is finally here, even when it is jam packed full of things. :)

Two of my BFFs, Meg and Stephanie finally announced their pregnancies!! I love when my sweet friends make babies.

The sun came out this week! it's finally nice and sun-shiny. And that?? Is a definite happy!



Grey's Anatomy is back next week!!! I am so stinkin' excited. Obviously I've had Pretty Little Liars to keep me occupied, but I've always been excited when Grey's is on.


CRAPPIES

I had to take my sweet pup in for his yearly vet visit. I know, it's what I'm supposed to do and it's what's best for him. But that still doesn't make him hate me any less. he looks at me with the saddest eyes as if he's saying "I thought you loved me, why would you let them do this to me?" breaks my heart all the time.



I wasn't home before 9pm one single day this week. I'm exhausted. SO many things to do and I feel like I'm go-go-go constantly. I hate it. And.. the end isn't in sight. Not fun.

And another week has passed with only one post per week. Sorry y'all. I hate to admit it, but blogging is on the back burner for me right now. I have a horrible sense of time management, and it's just one thing I'm having a hard time fitting into the mix with everything else I'm trying to juggle.

It's Valentine's Day!! So, be sure and be a sweetheart today. See what I did there? ;) 

I had Chipotle at least twice this week. I should be ashamed, but I'm not. Haha. It's my favorite, my happy place, and one of the restaurants that's super easy for me to eat at while I'm challenging!



I had a doctors appointment yesterday that I was very anxious about. And happily - for no reason. It ended up being nothing at all that I assumed. I'm OK :)

I got my new aztec sweater from Avery Lane in the mail this week, and I lalalaLOVE it. I wore it yesterday and I can't even count the number of compliments I received. Everyone loved it!


CRAPPIES

Binky is currently barking his head off while I have a ginormous headache. He's a little pain sometimes.

The skin on my hands looks super horrible right now. Thank goodness we have some warmer weather coming, so my dry skin can heal!

Chicken Noodle Soup {Recipe}

Last week when it snowed IN TEXAS (I know right?!) I had a major craving for chicken noodle soup. I shared my bowl on Instagram and some of you were interested in the recipe. Since I didn't take good pictures the first time around, I had the perfect excuse to make this yummy dish again so I could snap a few pics to share with y'all.


A big ol' bowl of YUM right there. I promise you'll really love this. It's perfect any time, but especially on those cold nights when you just need a good, warm meal to warm your bones.

First, let's gather all of our necessary ingredients.


2 chicken breasts, boiled and shredded
4 1/2 c. chicken broth
2 c. cooked pasta of your choice
5 celery stalks, chopped
1/2 medium onion, diced
2 carrots, chopped
1 tsp. basil
1 tsp. oregano
2 tsp. black pepper
3 cloves of garlic

Now, let's get this soup going!

First, drizzle some olive oil in a pot over medium heat. Add your garlic, onion, carrots and celery. Sauté for a few minutes until the onion is tender.

Add in the broth and season with basil, oregano and pepper. Bring to a boil.

Once it's boiling, turn heat to low and simmer, covered for 5 minutes.

Add in your pasta and bring to a boil.

Add chicken and leave on medium heat for 5-10 minutes to heat through.

Ladle into bowls, serve and enjoy!!

Side notes:
*I always boil my chicken and shred beforehand. I typically take 2 breasts, cut each in half, and boil for 15-20 minutes. Once they're cooled, I shred with 2 forks.
*You can use as many or as little veggies as you like. The celery and carrots come out to about a cup each. On the carrots, I don't use the whole carrots, I just use whatever I have on hand (which is usually carrot chips) and chop those up.
*For the onion, if it's mild, I may use a whole medium sized one. If it's strong (my eyes are badly watering), I'll only use a half of one.
*The usual noodle of choice for this soup is egg noodles. However, I prefer whole wheat pasta and couldn't find wheat egg noodles. The rotini has a similar substance as the egg noodle though.
*I usually always end up adding some chicken broth in the end. Once I get everything added in, and the pasta absorbs some of the broth, it usually needs more.

We got snow yesterday!!! Which means a possible snow day, today. More on that to come! But this time it was ACTUAL snow, not ice like we normally get. It was so pretty!


Nate wasn't super excited to pose for a pic in the cold when we were already running late to work, but he did so anyway because he likes to humor me. ;)

I get to see my BFF/co-host Stephanie tomorrow!!! I'm headed to a blogger meetup in Waco. I am so excited to see her and meet other awesome bloggers that I can't wait to call friends! :)

So far, I've done really well in my Chemistry class. Receiving all points on my homework and lab reports. SCORE. hopefully I can keep it up throughout the semester. Fingers crossed!

I made the most yummy Chicken Noodle Soup for dinner last night. Spaghetti was on the menu, but with the cold, I was really in the mood for something deliciously warm and hearty. So, I whipped up this little ditty.


I didn't really take ingredient pictures :-/ I hate when I forget to do that. let me round 'em up again and I'll share the recipe for you guys next week here on the blog.

CRAPPIES

I know I mentioned the snow in my happies, but I get a tad cranky in the cold sometimes. The snow is pretty and since it doesn't come often, it's a happy. But the cold is NOT a happy. I like to be warm. Where is Spring!?

I'm doing my 10 day cleanse right now, so I'm having to eat clean. Which is fine, but when I get a craving for something I know I shouldn't/can't have, it's a downer. Like it really sucks. I know it's going to be worth it in the end, but sometimes I just want some sugar in my mouth! #thatswhatshesaid


I feel like this one is repetitive, but I went yet another week without posting on the blog. :-/ I'm lacking serious motivation y'all. Tell me where you find the motivation and inspiration to write worthy posts.

We had a big meeting at work this week about lots of changes to come, and I'm excited! Sure, change is always a little scary and can be quite the headache, but in the long run I know this will be a really good thing.

I start my 24 day challenge tomorrow! It's my 2nd one, and I'm excited to kick some bootay at it! ;)



This week FLEW by! I can't believe it's already Friday.

I have ZERO plans this weekend, and I plan to keep it that way. I can't wait to sleep in and lounge on the couch. I don't want anything to do for once. I'm actually excited!

It was made obvious this week that my instructor isn't following the syllabus. It said we'd be studying Ch. 3 this week. So, I read Chapter 3 and did the handouts for it. Came to class and she started covering Chapter 2. I showed her the syllabus and said I was confused. And she waved it off, and said 'That doesn't matter'. Okay, well that's nice to know. Why write it if you're not going to follow it?

Binky needs a haircut so badly. His hair is so long that it's starting to tangle and he won't even let me brush it. :( I need to take him to the groomer ASAP!

A Photo An Hour - 1/28/14

Confession time: I am super nosy. I love knowing what people do for a living and the little minor things they do throughout the day. So, when Meg and Stephanie announced they'd be hosting A Photo An Hour link-up I was definitely in!

I hope you are too, because I totally want to creep in on your posts. :)


These pictures are from Tuesday, 1/28. I chose a day that I don't have class after work because it's hard to whip out my phone and snap pics while in class because I'm a good student, of course. :)

7:00 AM


Morning sunshine! Rockin' the bed head and a cross country t-shirt from junior high. Holla!

Just getting to work and clocking in. And yes, we still use the old school 'time punch' system.

9:00 AM


Only been here an hour, and I'm already 3 patients deep. Let's keep up this steady rhythm and the day will fly by!

Confirming the next day's patients. Again, old school. We do it ourselves, no automated system here.

Some of my patients are difficult, but in different ways. This one was difficult in the sense that he's pushing 100 years old, is legally blind and basically deaf. It's tough getting him to do what I need him to do. Now though, he's ready to see the doctor.

Lots of reports to scan and route into the correct patients' charts. It tends to stack up a lot. I had another stack this size that I had already scanned, but I ended up shredding it before I was able to take a picture.

Cleaning up an exam room after an I&D was performed on a patient's cyst. I made it black and white so it wouldn't look SO gross for you. You're welcome. ;)

My 2p patient cancelled. Score! Now I have time to eat my lunch. Sandwich, cheez-its and cucumber wedges. Yum!

3:00 PM


Making some phone calls. Talking to sick patients, calling out prescriptions to pharmacies, and giving lab results.

4:00 PM


We've got a big meeting at work the next morning, so I've volunteered to pick up donuts on the way into work. Gathering cash from co-workers.

5:00 PM


Quitting time! This means mail checkin' time, too. The post office is pretty much next door to my job, so it's quite convenient to go pick up my mail after work.

6:00 PM


Spending time with my two favorite boys. Binky always gets to excited when I come in the door. Then, it's like an extra surprise when Nate comes home. So sweet.

7:00 PM


Enjoying breakfast for dinner while watching Pretty Little Liars. AKA Nate's guilty pleasure. HA! He would kill me if he knew I told y'all that. But some Tuesdays, I think he's more excited than I am.

8:00 PM



Chemistry homework. :-/ Multi-tasking by listening to the State of the Union address in the background.

9:00 PM


Nightly shower time! It's still freakin' cold in Texas, so I'm wrapped up in the most comfy robe ever!

10:00 PM


I always read before I go to bed. Right now, I'm hooked on Gone Girl. During this hour, we also watch The Daily Show.

11:00 PM


Time to go to bed so I can wake up and do it all over again tomorrow! :)
