...And I'm Also Thankful For {link-up!}

This year, I'm also thankful for...

Package tracking. I am one of those annoying people who check the tracking like every hour when I'm expecting a shipment. I like to know where it is. And when I see that it's been delivered?? Ooooh I get so excited!

Food drive-thrus. Because let's face it, some times after work when I'm out running errands the last thing I want to do when I get home is cook. Chick-fil-a, FTW!

Redbox. I'm almost embarrassed to admit how often we get movies from Redbox. It's basically a daily thing. It's just so dang convenient.

Sleepytime tea. Because sometimes the sleeping pill alone just doesn't do the trick.

Pinterest. How else am I going to find all these recipes to drool over and outfits to have the inspiration to piece together?

Peanut butter oreos. If you haven't had these yet, you're seriously missing out. It's a little slice of heaven that perfectly calms my raging sweet tooth.

Nail salons. This girl doesn't have good nail painting skills. And for whatever reason, it just lasts longer when I get them done at the salon.

Coupons. Saving money excites me way more than it should.

Wine & coffee. Caffeine and alcohol. My 2 vices. They help me make it through the day! ;)

Hearty Beef Stew {Recipe}

Before I get into introducing you guys to a most delicious recipe - I have an announcement to make!

Basically, we know you're thankful. Everyone is this week. But we want to hear about those little things most people don't talk about. Sure, you're thankful for your friends, family and job, but what superficial things are you thankful for?

Now, onto the yummy stuff...

The weather lately has made me crave all things wintry. Not only do I feel like baking up a bunch of pies, but I'm also wanting some hearty stews and soups to go with them. 

This past weekend, I knew what would be just perfect for dinner...


The ingredients you need are as follows:



1 lb stew meat
1 can chicken broth
1 can beef broth
1 can corn (juice drained)
1 can green beans (juice drained)
6-8 small red potatoes 
Flour
Olive oil
Chili powder
S&P

If you'll notice above, the potatoes aren't shown. That's because I forgot to take a picture before I got started on them. I do the potato step first.



I wash the potatoes, cut them into bite-sized pieces, put them into the pot and cover with cold water. I get them boiling and boil until they are fork tender which is approximately 10-15 minutes. This saves tons of time later when I don't have to wait for them to cook once they are in the stew.



Next, I trim the fat from the stew meat and cut any bigger pieces into bite-sized pieces. Then I put the meat into a bowl with enough flour to coat the meat. The flour acts as a thickening agent in the stew later.


Then, shake off excess flour from the meat, pour a couple of teaspoons of olive oil into the skillet and brown the meat. Once it's nice and browned, pour the can of beef broth in the skillet. I let this simmer for about 5 minutes. 


Afterwards, you'll pour the meat/broth mixture into a big pot and then pour in the can of chicken broth. (in the picture above, I know I have a huge container of chicken broth, but I didn't use that. I only use around 15 oz)


After the mixture is warm, add in the cans of corn, green beans and your potato pieces from earlier. Add salt and pepper to season.



Once the veggies are softened (approximately 20 min) I add in chili powder. As much as you'd like. Some like it spicier than others. 


Then I let it simmer for 20-30 minutes to thicken.



Serve and enjoy!! :)

Weekend Lovin'!

It's been quite some time since I did a weekend recap. Since this past weekend was fairly eventful, I decided it was time to do another recap!

FRIDAY

After work, we usually don't feel like doing much. We usually grab dinner to-go or stay in and watch a movie. Considering it was the 50th anniversary of JFK's assassination, my history loving boyfriend insisted upon watching the 3 1/2 hour long movie. So, that's what we did. We got cuddled up in our cozy jammies and laid on the couch ALL night.


Binky never has any objections against these plans. ;) #lazybum

SATURDAY

I was up bright and early to meet up with my BFF and another bridesmaid to help her nail down some wedding plans. We met up at our childhood friends' mom's home, which is where the wedding will be held. She was such a good hostess!

She had made carrot juice for us and explained it's awesome health benefits. I was leery to try it at first because I am picky, but it actually wasn't bad at all. I pretty much finished my whole glass of it.


Next up, was plenty of coffee and cinnamon rolls while we chit chatted about wedding plans.

We really got a lot accomplished, and Stephanie (the bride, in the middle) said she feels much less anxious now that we helped her out. We also went to Hobby Lobby to play around with bouquet arrangements and made an appointment at a bridal shop in a couple of weeks for dresses! So much fun.



After only having a couple of cinnamon rolls that morning, by the time I got home I was STARVING. Nate was too and said he didn't know how long I was going to be, so he'd already made plans with a friend for dinner. They were going to a taco place, but I was really craving a burger. Luckily, the guys didn't have any arguments about the burger place I chose. So, I won :)



We got home and it was getting even more cold, so we bundled Binky up in his newest sweater. It's a little big on him, but makes him feel more cozy I think. :) And seriously? How adorable does he look in it??



The hoodie is just precious and even has a hood on it, so Nate was walking around with his hood on too so him and Bink were twins. I just love my sweet boys, they never fail to make me smile. :)


On our way home from dinner, we stopped at Redbox and rented The Purge. So we spent the rest of the night watching that. It was pretty intense and made me very anxious while watching it, ha. It was pretty good though. 

SUNDAY

We didn't do a damn thing, and I loved every minute of it!

We woke up and enjoying our coffee, and while I was watching Food Network, I sent Nate to the store for a few things so that I could make my beef stew (recipe to come!). It's so hearty, warm and delicious. It's just perfect for the weather we've been having.

I also ordered our Christmas cards!!! So excited about them.

It's raining/sleeting right now (as I type this) and the forecast is calling for snow. So, I will be spending the rest of my evening hoping that my boss will call and say no work on Monday! ;)

HAPPIES

I blogged this week! I actually thought I had blogged every day this week because I was a 'day behind' all week. For instance, my post yesterday I thought I was posting on Wednesday. Oops. But 4 days outta 5 ain't bad! ;) Much better than what I have been posting lately.

The weather has been really nice this past week. Not fall like by any means, but in the 70s which to me is perfect. Better enjoy it while I can, it's gonna get nasty tonight and all weekend. Boo.

We had our pictures done last weekend for our Christmas card! I'm sooo excited and pretty much love them all. I plan to do a post with all of them, but will not tell you which one will be on the card.. ya know until after they are already mailed. ;) Until then, here's a little sneak peak!



I finally went through my closet and tried on every single shirt and pair of pants. I have so many that I keep saving for 'when I'm skinny again' but when I read Sarah's post this week I realized that she was right. Once I finally 'get skinny again' I'm not going to want to wear my old clothes.. I'm gonna want to go shopping for new, fun stuff! It always feels SO good to purge my closet. And if you're interested, I listed some of the shirts on my Instagram for sale!

CRAPPIES

I have felt a little BLAH the past few days. Incredibly tired, exhausted and have a major headache. I'm blaming on the back and forth weather for now.

I checked the tracking on my NY&Co order that I placed this week and it won't be delivered until Monday. I was hoping to get it this weekend. I don't like waiting, ha!

Christmas is approaching entirely too fast. I am stressed about the gifts that I haven't yet shopped for. Better get on the ball!

Pinterest-Worthy Outfits

Each week, I'm inspired by Holly's Pinspiration Challenges. Each day she recreates a pin for her outfit. It's so much fun to see and follow along with.

I want to start doing the same, and I've even been pinning more and more fashion pins to my boards.

Last weekend when meeting the girls for dinner, I was trying to decide on what to wear. I was browsing through Pinterest, and I was actually trying to find pins that would give me an outfit with pink pants. I love my pink pants and they definitely don't get enough wear.

I couldn't find a pin that I liked or that I had the other pieces for, so I decided to throw together some pieces on my own.

Current Obsessions v.3

I'm back again with another edition of my current obsession. In this segment, I list 5 things that I simply can't get enough of lately.

Trader Joe's Honey Roasted Almonds

I'm fairly certain that TJ's has injected crack or some other addictive substance in these suckers. I bought them for a little extra crunch to add to my salads. When I noticed how delicious they were, I took a handful out of the bag for a little snickity snack and it was then that the gates to heaven were opened. I'm now eating these like they're going out of style and will be making another trip to TJ's this week to get another fix because my bag is getting empty. Cue meltdown in 3...2...1..........


New York & Company sales

I love this place. Last summer is when I really started shopping there. Everything is so trendy and great quality. When I saw that their pants are Buy 1, Get 1 Free right now, I couldn't help but snag up a few of my fave pairs in all of the colors and styles. 


Coffee Mate Thin Mint Creamer

I love anything mint flavored and my typical creamer of choice is Peppermint Mocha. A few weeks ago when I went to buy some, I noticed this bottle on the shelves. Considering that the thin mints are my absoulte favorite girl scout cookie I knew it'd be delicious. And folks? I was right. It's soooo good in fact that I have found myself using it over my tried and true peppermint mocha. 



This box of goodness is chock full of all the vitamins that give me an amazing amount of energy. I no longer slug around during the day at work and have to force myself to get tasks done. These vitamins give me the boost I need to GO! I can definitely feel a difference if I miss a day, and I don't like it at all. These are a must in my daily routine.

Juicy Lil' Tidbits

As per the request of some friends on my blog facebook, I'm giving y'all a few little facts about me.

Hopefully you'll learn something new. ;)


I love to floss. I don't know what it is, but I just love it. I carry floss with me everywhere. It's in my purse, my car, my desk, everywhere. I am guilty of busting the floss out as soon as I'm finished eating.

I'm an impulse spender. I rarely think about or save up for purchases. I don't think about whether or not I'll need they money for something else. If I want it at that given moment, I'll buy it. And yes, I typically have major buyer's remorse. 

I like to make up songs. Especially to tunes of songs that I already know. I just string together random words to try and make it sound funny. Binky especially loves when I sing to him to the tune of The Office theme song.

I'm a night thinker. My days are usually incredibly busy and I don't have a lot of time to do things for myself or come up with ideas. When I'm lying in bed at night and should be sleeping, I think of all sorts of stuff. Christmas gift ideas, outfit ideas, things I need to organize, whatever. Also, I thought of most of these "tidbits" while I was in the shower.

I rarely brush my hair. I know, it's probably horrible for my hair and may sound a little gross. BUT, I get out of the shower, let it air dry and sleep on it. In the morning, it goes in a bun on top of my head and doesn't come down until I am going to shower again that night. 

I have no skills. And I feel like Napoleon Dynamite when I say that, HA. Seriously though - I feel like I don't know how to do anything exciting. Some people sew, paint, do photography, ride horses, etc. I don't know how to do anything fun like that. I need a skill, y'all!

I hate admitting defeat. If you ask me a question that I don't know the answer to, I'm going to google the answer. If you ask me how to do something that I don't know how to do, I'm going to try and figure it out or at least pretend like I can do it before I give up. I guess I wish I was a know it all.

I hate the feel of lotion. When I put lotion on my legs at night, I wash my hands immediately afterwards. I just hate the way it feels and I never put lotion on my hands even if they're dry. It just feels gross to me.

I'm terrified of the dentist. And for no specific reason. I waste money every month on dental insurance because it doesn't get put to use as often as it should. I always push back my appointments because I can't handle it. The noises, the lack of control, the feeling - all of it. It's just awful.

Do you think I'm a total weirdo now???

The colder weather means I've busted out my favorite extra comforter and my fuzzy socks. Personally, my fave ones are from Bath & Body Works. Sooo comfy.


We've officially got our tickets booked for Christmas in Montana! I'm super excited to see SNOW and ski for the first time in my life next month. :)

I feel like I say this every week, but this week went by really fast. I feel like the closer it gets to the holidays, the faster time goes by.

Binky got groomed yesterday! And I also got him a new sweater. Poor thing has been so cold the past week. His tiny little body doesn't give off much heat.


CRAPPIES

I'm still sucking at life when it comes to blogging, obviously. I have just been go-go-go and once I'm home I barely even open my computer to do anything at all, much less put in the brain work for a decent blog post. I don't want to post just to post, I want it to be something you want to read.

Chapped lips.

Lots of sick patients have been coming into the office this past month. I'm taking all the sanitary precautions, of course but sometimes the germs still get me. Keep your fingers crossed I stay healthy!

Binky has been really whiney the last couple of days and I think he may be sick (that's not a happy) but he's been so sweet and cuddly. I mean, really? Why must he be SO ADORABLE?!?



I spent some time with my BFF and her 3 year old last weekend & I have another date planned for her for her birthday this weekend!

Nate and I produced my new fave picture of us.



I get to see Stephanie, Neely and Ashley tonight!!!! MAY-JAH happy!

CRAPPIES

Super crazy busy week at work. I know, I shouldn't complain. I really am grateful for my job, but when it stresses me out I can't help but put it in the crappy category for the week. Sooo ready for the weekend and sleeping in!

This cold weather is making my skin sooo dry. I feel like my skin is coming off in flakes. I can't get enough lotion. Yuck!

31 Days: Day 28-31 Recap & {Announcement!}

Now, I feel like a failure because we're now into November and I'm just now letting you guys know about the rest of my 31days challenge. I found it's kinda tough to blog every single day. I don't get on the computer much on the weekends, so that was something that was holding me back. I am usually out doing something else besides sitting at home on the weekends.

That's OK though, I'm here to finish! :)


October 28th - I helped a co-worker out and covered for her and her patients when she had to run home for an emergency she wasn't prepared for.

October 29th - I gave my BFF's mother in law some things for her doggy. A harness and some toys that I have and Binky will never play with. Her dog is Sarah and isn't she just the cutest little thing? They were both happy about my gesture.


October 30th - Nate and I left a hefty tip when we went to brunch. Okay, Nate left it since he paid, but it was my idea! :) Our waiter was super sweet, didn't charge us for a couple of my mimosas and just overall deserved a great tip. I wanted to tip at 100% but Nate is stingy with his money sometimes. ;)


October 31st - I brought some yummy seasonal cookies to my co-workers. For the last day of the month, and HALLOWEEN I thought this was fitting. As I mentioned before, they enjoy when treats are brought into the office.

Yet another week has FLOWN by. And as of today? It's November which feels so much closer to Christmas. :)

I posted every day this week. I just feel really good when that happens.

Binky looked absolutely presh in his Halloween costume even though he hates it.



We haven't used our A/C pretty much all month so I'm really excited about the possibility of a cheaper electric bill coming up.

CRAPPIES

I haven't been feeling too great this week. Let's just say isotopes are a pain in the you know what.

With the weather getting cooler, my skin is getting MUCH dryer.

I haven't felt like cooking at all this week. Leftovers and Chipotle it is!
